Clarified Jungle Bird

Ingredients
- 2 oz Dark Rum
- .75 oz Campari
- 2 oz Fresh Pineapple Juice
- .5 oz Raw Can Sugar Syrup
- .5 oz Lime Juice
- 1 oz Milk
- Garnish: Pineapple Fronds
Preparation
- Mix cocktail ingredients, then pour over milk.
- Pour 1 ounce through paper towel over a sieve, or a coffee filter. Let filter for one minute. This first pass will be a bit cloudy. Pour this first bit back into the curdling mixture, and rinse the receptacle you are filtering into.
- Repeat pouring through the filter until the liquid is clear.
- Chill in the refrigerator.
- Serve over a large ice cube.
