Clarified Jungle Bird

Ingredients

• 2 oz Dark Rum
• .75 oz Campari
• 2 oz Fresh Pineapple Juice
• .5 oz Raw Can Sugar Syrup
• .5 oz Lime Juice
• 1 oz Milk
• Garnish: Pineapple Fronds

Preparation

1. Mix cocktail ingredients, then pour over milk.
2. Pour 1 ounce through paper towel over a sieve, or a coffee filter. Let filter for one minute. This first pass will be a bit cloudy. Pour this first bit back into the curdling mixture, and rinse the receptacle you are filtering into.
3. Repeat pouring through the filter until the liquid is clear.
4. Chill in the refrigerator.
5. Serve over a large ice cube.
